WHAT IS PORK U

Welcome to the barbecue cooking school that will change your culinary life! Pork U is Georgia’s first and oldest barbecue cooking school, created exclusively for the backyard cook.  Since 2004, we’ve passed along to our students what we’ve learned from 11 years of professional barbecue competition cooking and 17 years of restaurant ownership. Our class has been featured in Garden and Gun, Atlanta Magazine, and the Atlanta Journal and Constitution, The Georgia Traveler, as well as numerous other publications. Hundreds of people from all over the country have travelled to Georgia to attend Pork U.

Many of the other classes concentrate on teaching competition team cooks how to win competitions. We, however, focus on teaching the average back yard amateur cook how to elevate your cooking skills to a whole new level. We do that by introducing to you professional cooking techniques, tips and secrets that we have learned from years of cooking in, (and winning), barbecue competitions from around the country, including Memphis in May, The American Royal Invitational in Kansas City, The Jack Daniel, The Big Pig Jig, The Blue Ridge BBQ Festival N.C. State Championship, and many, many others. Since 2004,  we have introduced thousands of people to what real barbecue should taste like, including 9 years of travelling to Washington D.C. to cater luncheon for the U.S. Senate. We are proud to continue that tradition by offering to you our newly revised and expanded class offerings.

CLASS FORMAT

We believe that hands-on experience is the best way to learn, so you will be doing your own brining, rubbing, marinating, injecting and cooking. You will learn how to make your own rubs and sauces. We’ll have on site a variety of smokers and grills so you can get an idea of what cooker best meets your needs. You will learn barbecue cooking techniques that we learned the hard way and you will do it in the comfort of a covered, screened area. We go rain or shine.

Current Class Offerings

Full day barbecue class 9:00 am – 6:00 pm – $350 per person

CLASS SPECIFICS

Our barbecue classes are offered on Saturdays, April through September, in a screened and covered pavilion in Kennesaw, Georgia. If, however, you have a group of 10 to 20 people, we can schedule a private class on a weekday or even on Sunday. Contact Sam personally for a specially scheduled group class.

Biscuits and Brunch class 10:00 am – 2:00 pm – $125 per person


Note from Sam:  I have been making home-made biscuits for over 60 years but in the last few years I have been asked by my friends to show them how to make biscuits more often than barbecue. Why? I believe that it is because, in these rushed days of microwaves, prepackaged meals, and no more family meals around a table, people are discovering a profound satisfaction in returning to the basics… making something with their hands that brings back memories of home-cooked meals and family traditions. Biscuits are simple, yet complex. There is nothing like the smell of a freshly baked biscuit to take us back to less complicated times.

Class Format

This hands on, four-hour class (10 a.m. until 2 p.m.) is offered year-round.  It is limited to a maximum of 6 people. The cost is $125.00 per person.  In addition to biscuits, we will be demonstrating brunch dishes, including the perfect poached egg, eggs benedict, and classic Hollandaise Sauce.  We’ll also show you how to make gravy, stovetop jams, home-made sausage, and other brunch classics.

PAYMENT AND CANCELLATION POLICY

Payment in full is required to lock in your class date. There are no refunds offered for any reason. If you have an emergency (which we sincerely hope does not happen) and you can’t attend, you are welcome to sell or give your seat to a friend. As a last resort, you are welcome to contact us and we will try to add you to a class on a different date, but we can’t guarantee this will happen. Seats do not hold over until the following year. When you are notified of your class date, you will receive payment information and class location.  Note that in order for your seat to be guaranteed, payment must be received by us no later than five days before the class date.
